    Easy Cheesecake Tart

    It's cold, and all I want to do is bake, but as you can see by the title, I decided to make something easy and simple for the blog. A cheesecake tart. Now you may think to yourself that a cheesecake in itself is already quite complicated, how much more in a tart form?! Well... let me tell you. 

     

    If you're a seasoned baker, you're welcome to use your favourite home made pie crust recipe, but if you're looking for a super easy way to make this dessert, all you need is a store-bought pie crust. Easy as that... poke it and poke it and then bake 'til lightly golden.  

     

    Next step is to make the cheesecake filling. This is a super simple, classic, New York Cheesecake filling with not as much decadence as a normal cheesecake since we're only making enough for a tart. The trick here is to have your cream cheese super soft so as it blends smoothly. Heat it in the microwave for 10-15 seconds and your good to go. Blend the rest of the ingredients together as per recipe, and bake. Simple as that.  

     

    Just like any other New York style cheesecake, this baby right here can be topped with anything you can dream of. As for myself, I wanted to go with a simple yet fancy garnish. I found some really unique fruit at the market and used it to top my cheesecake tart. Here we have fresh currants, and kiwi berries! Aren't they just the cutest?! And yes, they are available fresh, in the fall! 


    If you want more flavour, you're welcome to add your choice of pie filling. A personal favourite of mine is blueberry filling. Or, top with a mixture of fruit and a drizzle of honey and you're good to go. 

    So there you have it, a simple yet unique way to enjoy a classic dessert without having to eat too much with a normal thick slice of NY cheesecake. Although, if you're like me, you'll probably eat the whole thing in one sitting, haha just kidding... wink wink.
