Plumcot Upside-Down Polenta Cake (Gluten Free)

It's the season of harvests and stone fruit season is almost at an end, but thankfully, there's still enough of them to go around.
I, however, am a little bit lucky coz dad works with a lot of produce, and on occasion, can bring home quite a bit of unique items. Take these plumcots (aka Pluots) for example - aren't they beautiful?! Yes, they are plumcots, a plum and apricot hybrid that is oh so sweet at this time of year, and have both the flavour and texture of both fruit, it's such a pleasant experience.
Now with that, I really tried to pick my brain on how to best make a recipe using this lovely fruit, not wanting to go the usual route by making a pie or a tart, but something unique instead.
So I have come up with this lovely cake - my Plumcot Polenta Upside Down Cake. It's great because it's totally gluten free!!As much as I wanted to make a regular cake, I wanted to play around with textures as well which is why I chose to use polenta (cornmeal) and ground almonds, and then added flavour and moistness by using buttermilk, and a Cardamom Simple Syrup.
I'm so happy with how this recipe turned out, it's got great texture from the corn and almond meal, and awesome flavour. The plumcots were juicy and a bit tart, but balanced by the sweetness of the cake!Also, I know that not everyone can find plumcots, so feel free to use what ever stone fruit you may have, whether it's peaches or plums, or even cherries and pears, the method will remain the same and will turn out just as lovely.
