Time has gone by so quickly, I can't believe summer is almost over. I had a blast, and I hope you did too. I mean, over here in #the6ix, we haven't had too many sweltering hot days (which if I'm to be honest, I'm quite happy about) but the weather has been quite nice.. and with nice weather comes a few outings here and there, and some mighty fine fruit and veg.
With summer almost ending, I thought I'd make use of some of the last the season has to offer - stone fruits. I'm not gonna go the typical route with berries since you see them pretty much everywhere and can whip up almost anything with a hearty basket of your favourite berry, but instead I'm gonna go with something different like apricots. Although I must say that I cheated a bit and added some blueberries into this recipe, haha
Not only that, I can have you make a few more uses out of your grill. Enter my Grilled Apricots with Mascarpone Brûlée. I love these little guys - a bite full of a toasty-sweet apricot with creamy mascarpone and juicy roasted blueberries.
They're really quite simple to make too, with only a few simple ingredients and easy method whether you're using a real blow torch or the broiler of the oven.
They're sure to be a crowd favourite and refreshing end to a nice dinner.
