Brussels Sprout Caesar Salad

I love a classic with a twist, and I love Caesar Salads. It's my favourite salad of all time. It has great flavour when its done right, and it has a lot of different textures with the lettuce and croutons. Romaine lettuce is great, but my twist on this salad comes from using brussels sprouts. It's packed with vitamins and fibre, and has a nice crunch to it as well.
Now what really makes a good caesar salad is the dressing - the good stuff has loads of anchovies in it, and as much as I love a creamy caesar dressing, I did lighten mine up a bit. No mayo, just good ol' olive oil, and loads of flavour; though you still get a bit of creaminess from the dijon and parmesan.
I also like the added flavour that you get from the croutons. I like using a baguette, but you can use any day old crusty bread of your choice.
Just like any other caesar salad, this is a great salad to turn into an entree and top with your choice of protein. Here, I've added grilled steak, but this goes really well with salmon, chicken, or shrimp.
