Creamy Mango-Coconut & Strawberry Popsicles

If you're like me and have a hankering for any kind of frozen treat pretty much ALL THE TIME, then this popsicle recipe is just for you.
It's great for this time of year because mangoes and strawberries are at their sweetest toward the end of summer. Not only that, we have a few more weeks of warm weather and this is the perfect cooler.
Also, anyone else like the geometric design of this popsicle?
It's creamy and tastes like you're at a tropical getaway, although I'm pretty sure we all wish we were at that tropical getaway right now. But, I think for now, this will do. Stay-cation anyone?? Yes please! Throw in these popsicles too while you're at it.
Well then, if you're in the mood for a deliciously healthy dessert for yourself, your friends, and kids, this popsicle is for you. It calls for the simplest of ingredients, its vegan and absolutely yummy and just so refreshing, you won't stop at just one.
In a container large enough to fit popsicle mold, lean slightly on an angle and set aside.
In a blender, combine mango with ½ cup coconut milk and 1 tbsp agave. Pulse until smooth, and divide evenly into popsicle mold. Freeze for 1-2 hours.
Blend strawberries with remaining coconut milk and agave. Once mango layer is set, stand popsicle mold upright and pour in strawberry layer. Insert popsicle sticks and freeze for 4 hours, or until set.
