About 4 years ago, my family and I visited my aunts, Veron and Karen, in Chicago for Christmas. It was one of the most lovely Christmas dinners that we've had that wasn't at our home, but in the company of family, friends, and new acquaintances.
And of course, during the holidays, the food is always amazing and plentiful. There was turkey, and I helped make a lovely beer gravy, and there were lots of side dishes and merry drinks. The one thing that my family just loved though, was Karen's cornbread. It was cheesy, moist, flavourful, savoury... It had sun-dried tomatoes, bacon, cheese, butter... Ooooh, the butter.. It was everything you can ever hope for to eat with that delicious turkey dinner.
Needless to say, we've been trying to make it as good as hers ever since. Although over the years, I've added a few tweaks of my own, which then evolved and simplified to my own Jalapeño Cheddar one. To this day, I don't think mine can ever be as memorable as Karen's on Christmas dinner.
In my recipe, I've cut out some of the butter, and opted for twice the jalapeño and took out the sun-dried tomatoes - although I add them back in from time to time.
What I also really like about this recipe is that it is totally customizable! Just like in the original recipe, you can include sun-dried tomatoes, or switch out the green onions with chives, take out the bacon if you want this recipe to be vegetarian-friendly, and even switch out the cheese for monterey jack, or tex mex, and Italian blend... I mean really, the possibilities are endless!
I'm also a fan of the 'dump and stir' method - where all dry ingredients are mixed together, then all the wet ingredients get stirred in til combined. Super easy!
Even if I found this recipe at a holiday party, you can have them for any party. I've been knows to bring this to almost all the parties I go to - and thus it has been given the name 'Adrienne's Famous Cornbread' yeah, I think I'm pretty proud of that. It's really that good!
I've also made this whenever I have a craving for it. You can have it as a side for almost any meal, snack on it, and even have it for breakfast.
I mean this cornbread to me, is everything. I've had sweet cornbread, which may be your traditional one to have at a bbq, but this one a step-up from the original with added flavour and texture. So go ahead and make this cornbread, and take a step into the savoury side. You won't regret it, its absolutely delicious!
