This may be my favourite brunch recipe ever. It's so hearty and rich, it really is a great twist to your usual bacon and eggs. I did make it slightly healthier by adding some spinach in it, so I guess it isn't all that bad.. But I mean, c'mon.. Bacon? Eggs? Cheese? What's not to like?
What I really like about this recipe, is that you can get really creative it it. It's a great base and you can add or switch up any of the toppings. You can substitute the bacon for Canadian Bacon for a less fatty option. You can even add other fun toppings like roasted red peppers, cherry tomatoes, and even avocado.
So go ahead and get in the kitchen, make a lovely breakfast like this and keep all the original toppings, or get creative and top it with pretty much anything you like. After all, brunch is about having a good time in the morning, and enjoying good company with delicious food.
