Before anything else, can I just say how cute these are?! And trust me, they're absolutely addictive too!
Over Easter weekend, pretty much everyone had their aprons on and just wanted to get in the kitchen and make something beautiful. I decided that I was one of those people.
Given that it was Easter, and colours were starting to get incorporated into everyday life again, especially pastel colours, I knew that I wanted to make something colourful and fun. But nothing too crazy and complicated such as a piped sugar cookie. Although don't get me wrong, I do love to pipe me some beautiful cookies! Basically, I just wanted something simple enough with not too much fuss. So I decided that I wanted a simple shortbread cookie - but then I thought, "What can be more fun that sprinkles?!" So after I made my dough, I tossed a whole bunch in there and it was just magic.
I mean look at them! But then, since I was too lazy to go on a hunt for my cookie cutters, I decided to cut them into squares, tiny, tiny squares. Like, nibble size. Because why not!
I think its safe to say that I just purely adore these cookies. I like shortbread cookies for what they are - they have a crumbly texture and they're buttery and slightly toasted. What more can I ask for? Sprinkles and their tiny size just put them over the top for me and it was just really hard to stop popping them into my mouth. So instead, I packed them up in small decorative bags, tied them with ribbon, and gave them away to friends and family - and isn't that what baking is all about? Making and sharing the sweets you have in life?
So go ahead, enjoy a day of simple baking and make these to share and enjoy with those you love most.
