Classic Meatloaf

It's nice to say that I got my love of cooking from my mom - although I find it funny how she almost never measures her ingredients! I asked her one time for her recipe for meatloaf, and she did not want to give it to me in writing. Instead, she told me to put 'a little' of this, 'a bit' of that, 'a spoonful' of this... and so I realized that when I asked for exact measurements, she didn't have them, and always did it by feel or by eye. It's very chef-y if you ask me, but since I wanted to make it exactly how she does, we made the recipe together.

This is what we came up with to make all her meatloaves the same every single time - we were able to get all the right measurements, and all of it just makes the absolute best meatloaf I've ever had.

It's super easy too! Just mix all your ingredients together, bake, and voila - the tastiest meatloaf ever! And what to do with all that fat? Well make a roux and create a velvetty sauce to pour over the meatloaf, or even mashed potatoes.
